Fresh Peach Salsa

Ingredients

  • 4-5 whole Peaches peeled, pitted, and cut into chunks
  • 2-3 large Plum Tomatoes seeded and cut into chunks
  • 2/3 cup Sweet Onion chopped
  • 1/2 cup Fresh Cilantro chopped
  • 2 cloves Garlic peeled and cut intopieces
  • 2 4 oz cans Chopped Green Chilies
  • 4 tsp Apple Cider Vinegar
  • 1 tsp Lime Juice
  • 1/4 tsp Black Pepper
  • 1/4 tsp Salt

Instructions

  1. Add all ingredients EXCEPT green chilies into a food processor and pulse until well blended.

  2. Stir the green chilies into the salsa.

  3. Transfer to a serving bowl or jar.

  4. Cover and refrigerate at least 2 hours to overnight for best flavor.

  5. Serve with tortilla chips.
