Condensed Cream of Mushroom Soup

Servings 2.5 cups


  • 4 tbsp butter
  • 8 ounces mushrooms, diced 
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 1/2 cups half and half
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/3 tsp pepper


  1. Chop your mushrooms in small pieces in varieties of sizes smaller than a pea either by hand or food processor. 

  2. Place butter in a skillet and melt it. Sauté the mushrooms Until most of the water has evaporated. 

  3. Mix in the flour until incorporated 

  4. Add the broth and spices. Bring to a boil.

  5. Drop the heat to low and whisk in the half and half allow it to thicken for 3 minutes 

  6. Remove and let cool. Will continue to thicken as it cools.
