To Die-For Chocolate Chip Cookie!

CookiePromoI love a good cookie.  But being Paleo has left me searching for a good cookie that would keep my taste buds happy and my tummy from waging war.  I HAVE FOUND THAT COOKIE!

This is free of grains, gluten, dairy and soy!!!!  But not missing ANY flavor at all.  We went through the first batch in a day…and my 8 year old (aka picky girl) L O V E D them!  I may have eaten 2 of them for breakfast…ok 3…FINE I ATE 4 COOKIES FOR BREAKFAST!


Ingredients

1 – 16oz Jar of creamy cashew butter (Unsalted & Unsweetened)
2 eggs
1/2 cup of honey
1/2 cup of unsweetened shredded coconut
1 teaspoon of salt
1 teaspoon of baking soda
1 cup Good Life Semi-Sweet Mini Chocolate Chips

Directions

Pre-heat oven to 350

Gently mix all ingredients together.  Heap about 2 tablespoons of batter for each cookie onto un-greased cookie sheet, giving room for cookie to spread.

Bake about 10 minutes, until top is golden brown.  Let cool 10 – 15 minutes.

The cookies will be soft and moist.  Should yield 1 1/2 – 2 dozen cookies.

    I was SO excited about this recipe until I got to the coconut! I guess you can’t make them without it 🙁 Oh well, I’ll wait for the next great cookie you find 🙂
