Ingredients
- 1.5 pounds of beef stew meat, cut into 1-inch chunks
- 4 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- 4 tablespoons all-purpose flour
- 1 small yellow onion, chopped
- 1 1/2 tbsp minced garlic cloves
- 19 oz of Irish Beer (such as Guinness)
- 1 3/4 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1-pound small russet potatoes, chopped into 1” pieces
- 4 large carrots, peeled and cut into 1”-1 1/2” chunks
- 1 tablespoon Italian seasoning
- 1 bay leaf

Instructions
- Prep the Meat: Heat 1 tablespoon of olive oil in a Dutch oven over medium heat. While the oil heats, toss the beef stew meat in flour until all pieces are coated.
- Sear the Beef: Add the beef to the Dutch oven in a single layer. Sear each side for about 5 minutes until browned. Brown in batches if needed.
- Cook the Vegetables: Once the beef is browned, set it aside. Add the onion, garlic, and carrots to the Dutch oven and sauté for 5 minutes until softened.
- Add the Potatoes: Rinse and chop the potatoes into 1” pieces, then add them to the Dutch oven along with the seared beef.
- Deglaze the Pot: Pour a small amount of the beer into the Dutch oven and scrape up any browned bits from the bottom of the pot for added flavor.
- Add Liquids and Seasonings: Pour in the remaining beer, beef broth, Worcestershire sauce, and stir. Add the tomato paste, Italian seasoning, and bay leaf, stirring until the tomato paste is fully incorporated.
- Simmer: Cover the pot, reduce the heat to low-medium, and let the stew simmer for 30 minutes, allowing the flavors to meld together and the meat to become tender.
- Serve: Remove the lid and let the stew cool slightly before serving. Serve warm and enjoy!

Cooking Tips for the Best Irish Beef Stew
- Browning the Meat: Ensure the beef is browned on all sides for optimal flavor. Searing the meat adds depth to the stew.
- Use a Good Beer: Irish stout like Guinness works best to enhance the rich flavors. If you prefer a non-alcoholic version, substitute with extra beef broth.
- Choose the Right Potatoes: Russet potatoes hold up well during cooking, but you can use Yukon Golds for a creamier texture.
