Easy Homemade Pancake Syrup Recipe

June 22, 2026 by Tiffany Davis 1 Comment

Making your own homemade syrup is one of those simple kitchen tricks that can really come in handy, especially when groceries are expensive or you realize the syrup bottle is almost empty.

This easy homemade pancake syrup is made with basic pantry staples and only takes a few minutes on the stove. You can control the sweetness, skip the extra ingredients you may not want, and make about 2 cups for a fraction of what you would spend on store-bought syrup.

It is perfect for pancakes, waffles, French toast, or any breakfast where you need a little something sweet without making another trip to the store.

Why Make Homemade Pancake Syrup?

There are plenty of times when homemade syrup just makes sense. Maybe you are out of pancake syrup, maybe you are trying to stretch the grocery budget, or maybe you just like knowing exactly what is going into the food you serve your family.

This homemade pancake syrup is made with simple ingredients you probably already have in the pantry. It is sweet, easy to make, and gives you a quick syrup option for pancakes, waffles, French toast, oatmeal, or even biscuits.

It is not real maple syrup, but it is a simple old-fashioned pancake syrup that works beautifully when you need something homemade, affordable, and easy.

A quick note before we get started: this is a homemade pancake syrup, not pure maple syrup. It has more of a sweet brown sugar and vanilla flavor, which makes it perfect for everyday breakfasts when you want something simple and budget-friendly.

Homemade Syrup Ingredients

You only need a few simple pantry staples to make this homemade pancake syrup.

  • White sugar – This gives the syrup its sweetness and helps create that classic syrup texture.
  • Brown sugar – Brown sugar adds a deeper, almost caramel-like flavor that makes the syrup taste richer and more old-fashioned.
  • Water – Water helps dissolve the sugar and turn everything into a pourable syrup.
  • Vanilla extract – Vanilla is optional, but it adds a warm flavor that makes this homemade syrup especially good over pancakes, waffles, and French toast.

How to Make Homemade Pancake Syrup

Add the white sugar, brown sugar, water, and vanilla extract to a medium saucepan.

Whisk everything together and heat over medium heat, stirring often, until the sugar dissolves and the mixture begins to boil.

Once the syrup starts to boil, remove the pan from the heat and let it cool for a few minutes. The syrup will seem thin at first, but it will thicken as it cools.

Carefully pour the syrup into a clean jar, syrup dispenser, or airtight container until you are ready to use it.

Storage and Reheating

This homemade pancake syrup only takes about 10 minutes from start to finish, so it is easy to make fresh when you need it.

If you have leftover syrup, let it cool completely and store it in a clean airtight jar, syrup dispenser, or container in the refrigerator for up to 2 weeks.

The syrup will thicken as it chills. To use it again, warm it gently in the microwave or in a small saucepan over low heat. If it gets too thick, stir in a small splash of water until it reaches the consistency you like.

You can also freeze homemade syrup for longer storage. Thaw it in the refrigerator overnight and warm gently before serving.

Flavor Variations

This homemade pancake syrup is delicious as written, but you can also change the flavor a little depending on what you have on hand.

  • Maple flavor – Add a small amount of maple extract if you want the syrup to taste more like traditional pancake syrup.
  • Vanilla syrup – Add a little extra vanilla extract for a warmer, sweeter flavor.

  • Cinnamon syrup – Add a pinch of cinnamon while the syrup is heating for a cozy breakfast flavor.
  • Butter syrup – Stir in a small pat of butter after removing the syrup from the heat for a richer flavor.
  • Almond syrup – Add a tiny splash of almond extract for a different flavor but use a light hand because almond extract can be strong.

Homemade Pancake Syrup FAQs

Is homemade pancake syrup the same as maple syrup?
No, this is not pure maple syrup. It is a simple homemade pancake syrup made with sugar, brown sugar, water, and vanilla. It has more of a sweet brown sugar flavor and works well for everyday breakfasts.

Can I make this syrup without brown sugar?
Yes, you can make it with all white sugar if that is what you have on hand. The flavor will be lighter and a little less rich, but it will still work as a homemade syrup.

Can I use maple extract instead of vanilla?
Yes. If you want more of a traditional pancake syrup flavor, you can use maple extract instead of vanilla or add a small amount along with the vanilla.

Can I double this recipe?
Yes, you can double the recipe. Just use a larger saucepan so the syrup has room to bubble as it heats.

Why did my syrup turn grainy?
Syrup can turn grainy if the sugar does not fully dissolve or if sugar crystals form around the sides of the pan. Stir it well while heating and make sure the sugar is dissolved before removing it from the heat.

Can I use this syrup for more than pancakes?
Yes. This homemade syrup is also good on waffles, French toast, oatmeal, biscuits, yogurt, or ice cream.
