Easy and Delicious Eggnog Pancakes

If you’re the kind of person who looks forward to the holiday seasons for the surplus of eggnog readily available in stores, you’ll love these homemade Eggnog Pancakes that you can make with only a few ingredients.

  1. Be sure to spray your skillet with a generous amount of cooking spray to keep the pancakes from getting stuck and breaking apart while you cook them.
  1. Wait for the top side of your pancakes to begin bubbling before you flip them. When you start to see the bubbles, you’re good to give them a flip.

Do I need to use water in this recipe?

Water is optional. However, you can add it to the recipe to make slightly thinner pancakes. It depends on how thick and fluff you want your pancakes to be when you eat them and serve them.

Can I add chocolate chips to these pancakes?

Of course, you can add chocolate chips. White chocolate chips would likely taste best with the notes of vanilla, cinnamon, and nutmeg, along with the eggnog flavoring.

What should I put on top of the Eggnog Pancakes?

Maple syrup and melted butter is an excellent choice, but some people like to eat these pancakes without anything added to them because they’re that flavorful.

If you don’t have maple syrup, you can prepare a homemade glaze using powdered sugar, milk, and a pinch of vanilla extract.

The pancakes would also taste good with a few chocolate chips or pure powdered sugar sprinkled right on top.

How long will it take to make these pancakes and how many will I have?

It takes 10 minutes to prepare the batter for your pancakes and 20 minutes to complete the cooking process. At the end, you’ll have 12 pancakes in less than 30 minutes, which is enough to go around.

How to Store Your Leftover Eggnog Pancakes

When you have leftovers, you can place them in a food storage bag, removing the excess air and sealing it shut. If not, you can place the pancakes in a food storage container. Once you’ve placed them in the bag or container, put the pancakes in the fridge to keep them fresh for up to three days.

You can easily reheat your pancakes in the microwave for a few seconds to get them hot before adding your favorite toppings to them.

Ingredients

  • 2 cups Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg
  • 1 tsp Cinnamon
  • 2 Eggs
  • 1 tsp Vanilla
  • 2 tbsp Melted Butter
  • 2 1/2 cups Eggnog
  • 1 cup Water optional

Instructions

  1. Gather your ingredients

    Warm your skillet at medium low heat.

    In a medium bowl, mix together the eggs, vanilla, and butter.

  2. Add your dry ingredients: flour, baking powder, salt, cinnamon and nutmeg.

    Mix.

    Slowly incorporate the eggnog. If batter is still thick, add the water slowly until desired thickness is achieved.

    Batter should be thinner than cake batter but not too liquid.

  3. Spray your skillet with cooking spray. Using 1/4 cup, pour your pancake batter into the skillet.

    Let sit for about one to two minutes, or until small bubbles start to form. Then flip and continue to cook the other side for an additional minute.

    Repeat step 5 until all the batter is gone.

  4. Serve with maple syrup, a homemade glaze, or as is!
