Ingredients
- 2 cups Flour
- 1 tbsp Baking Powder
- 1/2 tsp Salt
- 1/4 tsp Nutmeg
- 1 tsp Cinnamon
- 2 Eggs
- 1 tsp Vanilla
- 2 tbsp Melted Butter
- 2 1/2 cups Eggnog
- 1 cup Water optional
Instructions

Gather your ingredients
Warm your skillet at medium low heat.
In a medium bowl, mix together the eggs, vanilla, and butter.

Add your dry ingredients: flour, baking powder, salt, cinnamon and nutmeg.
Mix.
Slowly incorporate the eggnog. If batter is still thick, add the water slowly until desired thickness is achieved.
Batter should be thinner than cake batter but not too liquid.

Spray your skillet with cooking spray. Using 1/4 cup, pour your pancake batter into the skillet.
Let sit for about one to two minutes, or until small bubbles start to form. Then flip and continue to cook the other side for an additional minute.
Repeat step 5 until all the batter is gone.
